Beef Stroganoff & Fried Cauli Rice

So this definitely tastes better than it looks! It's a quick easy family meal that you can serve with veg of your choice. 

First off, the fried Cauli Rice -
  • Simply grate your cauliflower so that you have your 'rice'. This can be frozen and used whenever you want to make rice.
  • Next finely shop 1/2 an onion (or however much you want) and throw it in a pan with the cauli rice. 
  • Add an egg and some milk, about 30mls (the more milk the softer your rice will be).
  • You can also add peas, chopped green pepper, spring onions, or JEERA SEEDS (this is what I used and it gives the rice the most amazing smell and Indian cuisine taste).
  • Cauliflower is very bland so be creative and add some seasoning. I used some aromat, soy sauce and dried herbs.
  • Fry everything for about 10mins or until you are happy with the softness of the rice. 

For the Beef Stroganoff you will need -

+- Beef steaks (minute steaks not Rump or anything)
1 Onion
+- 100mls Cream
1 Punnet of Mushrooms
 1Tbs+ Corn Flour
Seasoning.

Serves +- 4

  • First cut your beef into thin strips (I cheated and bought pre-sliced beef) and season with lots of ground pepper, salt and olive oil.
  • Cut the onion into strips and chop up the mushrooms. If you want you can also add a green pepper.
  • Fry the onions and beef until the beef has browned then add the mushrooms and cream and turn down the heat.
  • Mix the corn flour in a tiny bit of cold water then add it to the stroganoff. (If you need to add a bit more then do so)
  • Season with salt, pepper, steak seasoning, tabasco, coriander or any other herbs.  
  • Let everything simmer until mushrooms are soft and the cream has thickened.
