This quiche is pretty delicious and makes a great lunch to take to work! You can pretty much add any ingredients you like. Spinach and feta is a great combination!
Ingredients
- 6 bacon strips (or MORE)
- 6 eggs
- About a punnet of mushrooms, chopped (or less)
- 1 onion finely chopped
- 1 cup milk (or coconut milk for a dairy free option)
- OPTIONAL: Half cup grated cheese (I used Cheddar)
Method
- Fry the bacon, onions & mushrooms. I fried the bacon first and then did the onions and mushrooms together.
- I cut the bacon into strips after they had cooled down. You can do it before you fry them but it's easier to cut/break after it's been cooked.
- Pre-heat the oven to 180 degrees.
- Lightly grease a baking dish (I use olive oil spray)
- Add eggs and milk into the baking dish and beat together.
- Mix in the bacon, onions and mushrooms.
- Add seasoning such as ground pepper, salt, herbs or even some hot sauce.
- Sprinkle the cheese on top and put into the oven
- Bake for about 30mins.
Quick, easy and delicious! I always put Worcestershire sauce on after, it just makes it extra yummy!
